This machine works. I have a gas powered searing oven outside, but can't really use it in the winter. This searing oven works fairly well, but it doesn't put out the heat that it is advertised. I measured the heat output at the heating elements and it consistently gets up to 920 -950 degrees ferenheight which works but takes too long to sear. You can make adjustments to your cooking to compensate; for example if you want a mid rare steak, sous vide it rare, then sear it. Because the temp doesn't reach 1800 degrees like my outdoor unit, you have to leave it in this longer which cooks it more. This machine works great if you cook from raw, but it's difficult to get that right without pulling it out to check doneness every couple minutes.
